beautiful day

It’s a beautiful day for a Friday! The sun is shining with just a few clouds in the sky. Work is done for the week and I think the wife and I are going out on a date tonight. I am looking forward to relaxing with the most wonderful person in my life and just enjoying her company. Am going to have a nice cold pepsi (first I have had in three days), and sit in mky hammock for a bit.

Frosted Meatloaf – my version!!

Recipe: Frosted Meatloaf

Summary: different way to serve meatloaf and mashed potatoes

Ingredients:

  1. Meatloaf ingredients:
    1 lb. ground pork (or sausage or veal)
    2 lbs. ground beef
    1/2 onion
    2 pkgs. onion soup mix
    1 1/2 cups saltine crackers crushed
    2 eggs
    pepper
    bacon

    Frosting ingredients:
    8 or so potatoes (peeled and cubed)
    milk or cream
    butter
    sour cream
    grated cheddar cheese

Instructions:

  1. In a large bowl combine the meatloaf ingredients minus the bacon and mix well. Place aluminum foil on a shallow lipped baking sheet and place a wire rack on to sheet with a piece of foil on the rack and holes punched in the foil to allow drainage of the grease. Place meatloaf onto the rack and cover top of foil with bacon strips (tuck the ends of the bacon under the loaf). Bake at 350 degrees for about 45 minutes or until internal temp is 140 degrees. “Frost” the loaf at this time with the mashed potato mixture made according to the instructions below with a spatula (make it thick!). Place it back into over at 350 until internal temperature reaches 160 degrees. Place under broiler for a couple of minutes to give it some color. Let sit for 5 minutes and slice and serve!

    Frosting:
    Peel and cube potatoes. Place them into a pan of water and boil until tender. Place into mixer and add some milk, butter and sour cream until mixture is smooth. Add a handful of shredded cheese to add elasticity to the mix.

day 1 – Onward to Carbondale

Everything went well on getting started today. Mike and I got along well with getting everything packed up and cleaned up. Made certain the dogs had plenty of food and water for the rest of the day and that the ferocious feline was able to get to her food and litterbox. Off we go to pick up Jean at work.

After picking up Jean we take the backroads to Clinton when Mike realizes that he had left his “day bag” at home. Me, being the considerate father said “sucks to be you.” I was not about to turn around as it was mostly personal hyeine items that could easily be replaced.

As we continued on down towards Carbondale and we passsed Assumption, we noticed some handmade signs that concerned me quite a bit. These signs were about the economy and AIG which is understandable but the concern was the fact that the author was blaming the problems on the Jewish race and claimed that AIG is owned by the Jews (a fact that I have not acertained. the validity of as of yet). It seems as if anti-semitism may still be a problem in certain parts of central Illinois.

That aside, the rest of our first day was uneventful with us arriving at Ted and Sally`s house where we enjoyed a fine spaghetti meal and great conversation. I enjoyed a movie while Mike dealt with a National Guard issue and Jean visited with Sally Jo (see I spelled it right). More to come later.

Check out the MUSIC!!!

I’ve created a new page which you will note at the top of the blog in the navigation menu. It’s called strangely enough “Music Player” and if you go to it you will find a link there. That link (Play Now) will open up a pop-up window with a music player. Right now it is featuring a group called Silencing the Stones which is a Christian group that I’ve really enjoyed listening to lately. The track that I really enjoy is called “One More Second Chance,” be certain to check it out! I hope to be featuring other groups in the future and will be adding them to the m3u file that the player references. I do love good quality music and the Internet is fast becoming a repository for all types of music (both good and bad).

While we are talking about good things on the Internet, please take some time and visit Free Rice. It is a site that gives rice to needy families for every word you define correctly. A really great site and a definite benefit to boost your vocabulary (which many people direly need as our communication skills continue to deteriorate due to many differing factors, too many to go into here on this post). The word association may be definition or it may be just an association, you have to make the best choice. It matters little though as it benefits the UN World Food Program and is a sister site to Poverty.Com. So please go and waste a BUNCH of time there.
